I went through a stage about 8 years ago where I was trying to be an awesome baker. I made the most horrible cakes.
I really tried but I soon realised that I am not accurate enough to be a good baker. What I love about cooking is freestyling and that does not work with baking.
Guys, I am the Bang Average Baker haha! I would much rather pay someone to make an amazing cake than cobble some disaster together!
With that being said, here is my super duper easy recipe for rocky road. So easy, even I can make it look good.
You will need:
20cm square tin lined with foil or baking paper
200g of lotus biscoff biscuits
3 tbsp golden syrup
100g mini marshmallows
a handful of glace cherries
a big handful of toffee popcorn
Bash up the biscuits into broken chunks, try not to hit them too much so that they resemble sand which is what we did.
Melt the butter in a saucepan on a low heat. Once melted, add in the broken up chocolate and golden syrup and keep stirring. Set aside once fully melted.
Put the mini marshmallows, popcorn and cherries into a bowl. Sample some of each to ensure proper quality controls are conducted by you and any helpers.
Stir in the melted chocolate and get everything coated in chocolate.
Pour out into the lined tin and squash down.
Pop in the fridge for at least 3 hours. I suggest you leave the house to avoid temptation of eating it before it has set.
Once the time has passed extremely slowly, lift it out of the tin and dust with icing sugar.
Cut into 16 squares and serve.
